When I’m feeling particularly sorry for myself, I like to bake. This particular recipe was historically “Santa Snacks” but was renamed “Sadness Snacks” because I can’t only make these during the holidays (madness) but also because they are easy to make even when so depressed I want to die. When my husband comes home and sees me on the couch with a bowl of Sadness Snacks, he knows there’s trouble afoot.
Yea! You need
- a 9-13 in baking dish but other sizes will do– spray with nonstick stuff
- one can of sweetened condensed milk
- 1 stick of butter
- 1 c. coconut flakes
- 1 c. graham cracker crumbs
- 1 c. peacan bits
- 1. chocolate chips
- one can sweetened condensed milk
Heat oven to 350.
Melt the butter and make your graham cracker crumbs. The best and most enjoyable way to do this is put the crackers in a big ziplock back an then hit them with a rolling pin or a can until nice and crumb-y.
Pour butter, crumbs, and coconut in the bottom of pan (lining pan with foil or parchment is helpful but not necessary).
Mix together and smoosh flat into bottom of pan.
Sprinkle the chocolate chips and pecans (which can be smashed in similar way to the crackers).
The last step is to evenly pour the can of condensed milk over the food pile. It will look like this:
Put in oven and bake until browned and bubbly. You CAN wait until it cools and cut into bars, but the most authentic way is the scoop it out, still hot and goopy, onto a plate and eat with a fork.
